This recipe for macaroni and cheese has all of the rich, tasty goodness of the original, but with only 3 grams of fat:

Ingredients
3/4 cup evaporated fat-free milk
1 cup low-fat cottage cheese
1/2 cup part-skim ricotta cheese
1/2 cup low-fat cheddar cheese
1/2 tsp nutmeg
1 pinch fresh ground pepper and salt to taste
1 tsp Parmesan cheese
1 Tbsp dry bread crumbs
1 lb cooked elbow macaroni

Preparation

  1. Preheat the oven to 350 degrees.
  2. Heat the milk in a saucepan over low heat.
  3. Add the cheeses until they melt, stirring constantly.
  4. Stir in the nutmeg, pepper, and salt.
  5. Remove the cheese sauce from the heat. Add the cooked pasta to the cheese sauce and mix well.
  6. Pour the mixture into a 2-quart casserole dish. Sprinkle with Parmesan cheese and bread crumbs.
  7. Bake the casserole for 15-20 minutes until bubbly and the top is browned.

Serving Size: 1 cup ; Serves 6

Walk from Obesity

Obesity has become an epidemic in America. 33.8% of American citizens are considered obese, which means that their BMI is 30 or greater. In 2010 every state in the United States had at least 20% rate of obesity, with 30.5% of adults in Pennsylvania being obese.

On Saturday, 10/1/11, PinnacleHealth is sponsoring the Walk from Obesity to help combat this problem and support those who are obese in our community in their efforts to make positive changes in their health.

Walking is one of the easiest forms of cardiovascular exercise, and a great way to start working towards reaching your weight loss goals. Just about everyone can participate, at any fitness level, and it can be done anywhere in a gym on the treadmill, on a track, at the mall, even right outside your front door. There are even walking workout DVDs that you can purchase to walk your way to better health inside your own living room.

Walking is a step in the right direction if youre trying to lose weight. Perhaps you are living a lifestyle that is too monotonous or stressful. Your body tries to correct the imbalance by sending you a message: a craving. A craving for something sweet could mean you need more high-quality protein, more exercise, more water or more love in your life. The key to stopping the sugar craving is to understand and deliver what your body really needs.

No book or theory can tell you what to eat. Only awareness of your body and its needs can tell you. Of all the relationships in our lives, the one with our body is the most essential. It takes communication, love and time to cultivate a relationship with your body. As you learn to decipher and respond to your bodys cravings, you will create a deep and lasting level of health and balance.

Nutrition counseling can boost long term dieting success

Over half of the New Years resolution dieters in 2012 - made the same diet resolution last year. In order to find long term weight loss success, many people don't realize that exercise alone will not keep you physically fit. It is also imperative that you know and understand how your body processes, stores and uses food as fuel.

Nutrition is a key weight loss component that is often overlooked in many of the mainstream fad diets and weight loss programs. Often those following the meal plan understand very few of the specifics that will lead to long term success.
