Patriotic Pudding Pie

Just because you had weight loss surgery and are trying to eat healthy, does not mean that you cannot indulge every now and then, especially on holidays. But there are still dessert recipes that are healthy and taste good! The Patriotic Pudding Pie is just that.

Ingredients:

1 pie crust

1 block of tofu, soft

1/2 cup vanilla soy milk

1 package of vanilla pudding mix (sugar-free optional)

1/4 cup strawberries

1/4 cup raspberries

1/4 cup blueberries

Cool Whip

Directions:

1. Bake pie crust.
2. Combine cold vanilla soy milk, tofu, and pudding mix in a blender, and then chill.
3. After the pie crust has completely cooled, pour pudding mix into the pie crust.
4. Put cool whip on top and use berries to make a patriotic design.
5. Put in the refrigerator to keep chilled until ready to serve.

Plan a picnic for summer fun

Don't let summer go by without a picnic in one of metro Birmingham's many parks. Picnics are fun for everyone, young and old alike.

First of all, keep food safety in mind when packing the basket or cooler. Store perishable food in the fridge until ready to go. Then pack the food in an insulated cooler with blocks of ice or ice packs. Place the food on the bottom of the cooler with the ice packs on top. Bacteria can grow if the food is left out for more than two hours. And in the Birmingham heat, food can warm quickly. Keep cold foods 40 degrees or below and hot foods 140 degrees or above.

Use shallow containers for fresh food so that the food chills quickly. Carrot and celery sticks, cucumber slices, and salsa for whole grain corn chips are healthy take-along foods. Grapes, watermelon slices, and strawberries add something sweet and refreshing to the mix. (Beware of children running with food in their mouths! This could be a choking hazard.)

Sandwiches make great picnic food and are easy to prepare beforehand. Try pita bread for something different. Commercial mayonnaise is ok for sandwiches, but avoid homemade mayonnaise. The raw egg yolks and the lower acid level in the homemade version can promote spoilage and food poisoning.

If planning to grill, be sure to pack uncooked meats in a separate cooler. Red Dirt Memorial Run

This weekend, Enid is putting on a memorial half marathon to remember those who have sacrificed their lives for our freedom. This run starts at 7 am at Enid's Woodring Memorial Airport and circles around to East Rupe and East Southgate road before returning to the starting line on Boeing Drive.

If you're just starting out on your weight loss, you may not be up to doing a half marathon yet. If this is the case, don't feel that you can't participate. Though you may not be up to running a 5k, there's always next year. Enid has a number of marathons and half marathons that go on throughout the year.

You don't even need to be at goal weight to participate in a half marathon. You just need to be able to walk 3.1 miles.

If you think a marathon sounds like fun, but you know you're not in shape to walk even the 3 miles, you might consider starting a Couch to 5K program like the one that you can find here (opens in a new window). These programs step you through building your stamina. You will need to supply the determination and work that goes into the 9 week program.

If you're looking for more support in your marathon training, you might consider joining the Enid Running Club. The Running Club has a marathon training that's free for those who have paid their memberships in the club. Twinkies to return: What's in these Frankenfood snacks, plus smart swaps

It's official. Twinkies, those concoctions made of white flour, white sugar, saturated fat and a heck of a lot of preservatives, are set to return to your supermarket's shelves in mid-July, reported AdWeek on June 27. And because so many of us mourned the reported demise of those Frankenfood treats, Hostess "is expecting a blockbuster return next month for Twinkies and other sugary treats, such as CupCakes and Donettes," according to AdWeek. Just to tempt you further, Hostess even has added a tag line to its boxes: "The Sweetest Comeback In The History Of Ever." However (and you knew that a caveat was coming), the damage done to your diet by these cakes is considerable.

The ingredient list on Twinkies, reports Fooducate, reads like this: "Enriched Bleached Wheat Flour [Flour, Reduced Iron, B Vitamins (Niacin, Thiamine Mononitrate (B1), Riboflavin (B2), Folic Acid)], Corn Syrup, Sugar, High Fructose Corn Syrup, Water, Partially Hydrogenated Vegetable and/or Animal Shortening (Soybean, Cottonseed and/or Canola Oil, Beef Fat), Whole Eggs, Dextrose. Contains 2% or Less of: Modified Corn Starch, Glucose, Leavenings (Sodium Acid Pyrophosphate, Baking Soda, Monocalcium Phosphate), Sweet Dairy Whey, Soy Protein Isolate, Calcium and Sodium Caseinate, Salt, Mono and Diglycerides, Polysorbate 60, Soy Lecithin, Soy Flour, Cornstarch, Cellulose Gum, Sodium Stearoyl Lactylate, Natural and Artificial Flavors, Sorbic Acid (to Retain Freshness), Yellow 5, Red 40." Gulp. Here's the damage done to your body:

Growing Outrage Over Pink Slime in School Lunches

Ever since the U.S. Department of Agricultures (USDA) decision to buy seven million pounds of beef byproducts for use in the national school lunch program has made the news, there has been a rare public outcry, not often heard of in connection with food policies in this country.

Pink slime, which consists of low-grade beef trimmings, cartilage, connective tissue and other less than appetizing animal parts, ground up, chemically disinfected and pressed into a paste-like substance that can be used as meat filler, has been included in our ground beef supply for decades. According to a report by ABC News, 70 percent of ground beef sold in supermarkets in the U.S. contains these additives. Only certified organic meat is guaranteed to be without.

The USDA has declared lean finely textured beef (LFTB) a more palatable term for pink slime to be generally safe for consumption and does not require it to be labeled separately. In other words, unlike almost all other additives, including preservatives and artificial coloring agents, meat fillers dont have to show up on ingredients lists or nutrition facts labels.

Since meat mixtures are more predisposed to E. coli and salmonella contamination than higher quality cuts, they are treated with a pathogen-killing chemical called ammonium hydroxide, which gives it the pink color. The company that sells ground beef treated with ammonia, Beef Products Incorporated (BPI), considers LFTB not only to be safe, but also nutritious and perfectly suited for school children to eat.

Including in the national school lunch programs beef products accomplishes three important goals, said BPI spokesperson, Rich Jochum. It improves the nutritional profile, increases the safety of the products and meets budget parameters that allow the school lunch program to feed kids nationwide every day.

Cost considerations are undoubtedly a factor when the USDA decides what foods will be included in the program that feeds over 30 million kids every day for free or at reduced prices. Meat is expensive and using fillers can make a big difference in the budget. But it is less conceivable why the agency would take such a step at a time when it promotes higher nutrition standards in school cafeterias and urges kids to eat more fruits and vegetables and less empty calories. Its a mixed message at best.

Even if the use of pink slime in the meat supply is safe, it offers no nutritional benefits to speak off. Not only is this a potential source of killer pathogens if the ammonia levels are not controlled properly, but the overall protein quality of the beef hamburger is compromised by the inclusion of LFTB, said Dr. Gerald Zirnstein, a microbiologist who worked at the USDAs Food Safety and Inspection Service and who is credited with the first coining of the term pink slime.

The backlash against the USDAs decision has been swift and still shows no signs of abating. Within a few days following the first reports in the press and social media, Houston-based food columnist, Bettina Siegel, was able to collect hundreds of thousands of petition signatures against the USDA plans, many from concerned parents. Other initiatives across the country have reported similar responses. The widespread attention and media coverage has prompted several fast food outlets like McDonalds, Taco Bell and Burger King to announce their discontinuation of LFTB in their ground beef.

In the end, this whole episode may turn into an opportunity for consumers to become more discriminating in their food choices. Even if the government deems certain ingredients to be safe, it doesnt mean they should not be listed and explained in great detail and plain English for everyone to understand. When it goes in our food in supermarkets, restaurants or school cafeterias, we have the right to know, so we can make informed choices. The USDA of all institutions should not set a bad example of how to avoid scrutiny.

Mom loses 112 pounds to prevent her daughter from following her path to obesity (Video)

Losing weight is one of the most challenging journeys many of us will ever encounter. However, a young mother has claimed victory in her battle with obesity, according to a Dec. 7 Shine from Yahoo! report.

Cacia Griggs lives in England and became determined to drop weight when she broke her daughters bed as she tucked her in. She enlisted the help of a local weight loss center and lost an amazing 112 pounds.

Griggs, 26, said her daughter was her motivating factor after reading a study that children with obese parents are more likely to struggle with obesity themselves.
