Famed for his best-selling books and ground-breaking research, Dr. Neal Barnard talked with us recently in an exclusive interview on the benefits of a vegan diet. "The people who live the longest and experience good health all have one thing in common: Their diet comes from plant sources," says Dr. Barnard. In one of my clinical research studies, we measured metabolism in a group of older people with chronic weight problems. We then asked them to eat differently for several weeks. The result: Calorie-burning rates jumped, with an increase in participants' metabolic rate of about "16 percent higher" for up to three hours after each meal.
