1/3rd c. & 2 Tbsp olive oil, divided

1 each medium red onion & red pepper, diced

1 lb chopped mixed greens

10 large eggs (or 20 egg whites)

2 Tbsp parmesan cheese

tsp each salt, pepper, and red pepper flakes

1 Tbsp red-wine vinegar

8 oz part-skim ricotta

1 c. fresh basil leaves

3/4th c. fresh parsley leaves

1/4th c. fresh mint leaves

1 clove garlic, chopped

1 tbsp pine nuts
