Last November, certified clinical nutritionist Cynthia Pasquella introduced her PINK Method diet and it took off like a quinoa-fueled rocket.

Now she returns with a new book, The Hungry Hottie Cookbook (Rainy Cat Press), which features 110 creative plant-based recipes for every meal and snack of the day. Its available at her website, cynthiapasquella.com, in either a physical book or an e-book.

We talked with her recently to find out more about the book and about her approach to food.

Q. What was the inspiration for the new cookbook?

A. I'm really all about meeting my audience where they are and giving them what they want. After the launch of my first book on weight loss, PINK Method, my audience responded with an intense desire for a cookbook. They wanted meals that helped them eat healthier -- including more plants and fresh ingredients -- that had 10 or fewer ingredients and could be on the table in 30 minutes or less

Q. How about the title? Where did that come from?

A. After over 10 years of serving women in the field of wellness, I realized that they were hungry. Not just hungry for mouth-watering food but for soul-watering living. Yes, they want to be a "hottie" but they're also on fire for living a richer, deeper, healthier more meaningful life. This cookbook helps them do that. In addition to recipes, they receive a plan for transforming their spirits and their lives.

Q. Why is a plant-based diet optimal?

A. I want to quickly clarify that this isn't a cookbook for vegetarians or vegans. It's a cookbook for people who know and want the benefits of eating more plants but they just aren't sure how to jazz them up and make them taste amazing.

It's no secret that eating a plant-based diet is extremely beneficial for weight loss, increased energy, gorgeous hair and skin and optimal health. In fact, it's hands-down the best, easiest, fastest way I've seen for women to lose weight and keep it off for good. However, you don't have to limit your diet to plants if that isn't your thing.

Q. So no calorie counting? Why is that? Is it hard for people to stop thinking about calories all the time?

A. Calorie counting is such a deeply ingrained myth when it comes to weight loss. In fact, weight loss isn't about calories at all, but that old marketing message from the 90s is really hard for most people to let go of.

It's also not a great way to optimize health. I would much rather someone eat an apple -- roughly 100 calories -- than a "snack pack" of cookies for the same 100 calories. However, when we're guided by false principles like calorie counting, people often choose the cookies since the old message is that calories are the only thing that matters.

We know that there's much more that goes into permanent weight loss than counting calories. It's a beautiful dance of nutrients, psychology and thought patterns and even spirituality and neurological switches. It's about changing your view of yourself and elevating your entire life.
