Colorado Springs has many of these stores including Outside the Breadbox and Cere's Kitchen Company. So, the question becomes, what is gluten and why are so many people turning their backs to it?

Paleo Bread
1 cups almond flour
cup arrowroot powder
cup flax seed meal
teaspoon sea salt
teaspoon baking soda
4 eggs
cup walnuts, coarsely chopped
cup pistachios, coarsely chopped
cup pumpkin seeds
cup sunflower seeds
cup sesame seeds

In a large bowl, whisk eggs 3-5 minutes until frothy
To the same bowl, add almond flour, arrowroot, flax meal, salt and baking soda
Add nuts and seeds
Pour batter into a greased medium sized loaf pan
Bake at 350 for 30-35 minutes, until a toothpick inserted into center of loaf comes out clean
Cool and serve.
