Ingredients for Crust
- 3/4 cup graham cracker crumbs (about 5 cookie sheets)
- 1 tablespoon finely chopped pecans
- 1 teaspoon granulated sugar
- 1 tablespoon butter, melted
- Cooking spray
Filling Ingredients:
- 1 cup (8 ounces) 1/3-less-fat cream cheese, softened
- 1/2 cup granulated sugar
- 1/4 cup packed light brown sugar
- 1 (15-ounce) can unsweetened pumpkin
- 2 large eggs
- 2 tablespoons bourbon
- 2 teaspoons vanilla extract
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/8 teaspoon ground allspice
Directions: Preheat oven to 350. To prepare crust, combine first three ingredients in a bowl. Drizzle butter over crumb mixture; stir with a fork. Firmly press into bottom and one inch up sides of a nine-inch springform pan coated with cooking spray. Bake at 350 for eight minutes or until lightly browned; cool on a wire rack.
To prepare filling, place cream cheese, 1/2 cup granulated sugar, and brown sugar in a large bowl; beat with a mixer at medium speed until smooth.
