The past few days have seen a flurry of articles about chocolate. Chocoholics are cheering. Not only does dark chocolate have health benefits such as lowering blood pressure and reducing the risk of blood clots, but new work has succeeded in creating a lower-fat chocolate. Maybe so. Researchers at the University of Warwick in England have succeeded in reducing the fat in chocolate and producing an acceptable version of the food. This was done by removing the cocoa butter and milk fat and replacing them with droplets of cranberry and orange juice.

Substituting fruit products for fat is not a new idea. During the 1990s when fat was shunned, recipes that replaced fat with applesauce or pureed prunes and peaches appeared frequently in cooking magazines and other publications. And the resulting baked goods were often quite tasty.

However, the current study on chocolate takes fat substitution to a new level.
Researchers were able to remove 50% of the fat and then infused the chocolate with fruit juice. The resulting product still had the creamy characteristics that people love in a chocolate treat. The product did have a fruity taste, but researchers are working on that, too.

The fat in chocolate comes from cocoa butter and is not particularly unhealthy. The fat is a combination of three fatty acids: a monounsaturated fat called oleic acid that is also found in olive oil, a saturated fat called steric acid that does not increase or lower cholesterol, and another saturated fat called palmitic acid that does affect cholesterol.

But cocoa butter, nonetheless, does pack a punch in the calorie department. So a reduction in fat would help reduce the calories one consumes when eating chocolate.

Rummaging through my food cabinet, I noted different types of chocolate and studied the labels. Three tablespoons (15 grams) of Hersheys unsweetened cocoa powder has 30 calories. Cocoa powder has had most of the cocoa butter removed. In this state the cocoa is bitter and dry.

If you add a tablespoon of fat to the cocoa, the cocoa will be equivalent to one ounce of unsweetened baking chocolate and total 150 calories.

Five pieces of Dove Dark Chocolate candy (one serving) is 210 calories with 120 of those calories from fat, as stated on the label. We pay a caloric price for a creamy, tasty treat.

For those who indulge frequently in chocolate, this reduction in fat may help ease the guilt and reduce the weight gain from all those calories while still allowing one to reap the health benefits of chocolate. That is to say if the process to remove the fat doesnt interfere with chocolates antioxidant profile.

When and if the new chocolate product is available, I may give it a try. But for me, nothing compares to a good, rich dark chocolate, eaten in moderation, of course.
