For each quesadilla you will need:

Vegetables you like (squash, zucchini, red pepper, mushrooms etc)
Two tortillas (flour or corn, whichever you prefer)
cup refried beans
One slice of cheese (cheddar, pepper jack, chipotlewhatever you like)
Vegetable spray

Directions:

  • Slice the vegetables length-wise so that they will cover as much of the tortilla as possible.   • Let the pan cool down a bit, if needed. Spray with some more cooking spray. Then, place the quesadilla in the pan with the cheese side down until golden brown. Carefully flip the quesadilla over, and cook until the other side is golden brown. Note that the second side goes a lot faster than the first.
  • When done, put the quesadilla on a cutting board and use a pizza cutter or large knife to cut into quarters.
  • Serve with sour cream and salsa if desired.
