Thanksgiving has come and gone, but refrigerators across the country are full of delicious leftovers for the weekend. Although some find a turkey sandwich the ultimate treat, here are some other ideas to whet the appetite and make use of all that food.

Turkey is versatile and can be used in numerous ways.

  • Stuff pita bread with turkey salad made from chopped nuts and celery, raisins or dried cranberries, and chopped apples.
  • Use turkey in a stir-fry or in fajitas with sliced sweet peppers, carrots, and browned onions.
  • Create a creamed turkey dish with fat-free cream soups and serve over rice, pasta, or barley. Or, combine the ingredients together for a turkey potpie.
  • Add turkey to your favorite sweet-sour recipe.
  • Make a soup or chili in the crock pot and add leftover relish tray vegetables such as carrots and celery.

Thanksgiving side dishes can be creatively used as well.

  • Cranberry sauce is great heated and spooned over baked sweet potatoes, squash, chicken, and fish.
  • Leftover baked sweet potatoes can be mashed and used instead of pumpkin in quick breads and muffins. Or, add cup to your favorite pancake recipe.
  • White potatoes are easy to mash and used as a base for a nutritious pie.
