If you celebrate Cinco de Mayo, one of the best things you can do for your celebration is to forgo the store bought salsa and make some at home from scratch. That way, you can tweek the salsa to reflect your tastes and creativity. And everyone who eats your fresh made masterpiece will have experienced the joys of fresh salsa, many of them for the first time.

As can be seen in the photo, what you put into your is up to you. Or, in some cases, up to whatever is available at the time. This is being written from the Netherlands, which has a wonderfully wide selection of produce to choose from to put into my Cinco de Mayo Pico. Unfortunately, things like jalapeno, serrano peppers and cilantro are hard to come by, so I make do with the red peppers available. They are not nearly as spicy but they are quite delicious. In place of the cilantro, I add freshly torn leaves of basil, which is very popular here and the plants are sold in the grocery store.

Salsa Fresca, Salsa Cruda, Pico de Gallo Base

  • Onions (1 red, 1 yellow, and 1 bunch green) - all diced
  • Radishes (1 bunch) - diced
  • Beefsteak or Heirloom Tomatoes (3-4) - diced
  • Garlic (2-3 cloves, diced very finely)
  • Peppers (jalapeno, serrano, whatever kind you like, seeded and finely diced)
  • Cilantro to taste (finely diced) - Or try fresh basil, torn instead of diced
  • Lime (or lemon, or both) - juice only, not the seeds

Mix all together and adjust to your taste or preference. Want it hotter? Choose hotter peppers or add more of the ones you used. Too hot already? Add more tomato or radish. Fresh, home made, salsa is undoubtedly the healthiest and most nutritious addition to any Cinco de Mayo celebration. It is nutrient dense and has very few calories. It looks good and it goes with everything. What more could one ask of a favorite food?
