Don't let summer go by without a picnic in one of metro Birmingham's many parks. Picnics are fun for everyone, young and old alike.

First of all, keep food safety in mind when packing the basket or cooler. Store perishable food in the fridge until ready to go. Then pack the food in an insulated cooler with blocks of ice or ice packs. Place the food on the bottom of the cooler with the ice packs on top. Bacteria can grow if the food is left out for more than two hours. And in the Birmingham heat, food can warm quickly. Keep cold foods 40 degrees or below and hot foods 140 degrees or above.

Use shallow containers for fresh food so that the food chills quickly. Carrot and celery sticks, cucumber slices, and salsa for whole grain corn chips are healthy take-along foods. Grapes, watermelon slices, and strawberries add something sweet and refreshing to the mix. (Beware of children running with food in their mouths! This could be a choking hazard.)

Sandwiches make great picnic food and are easy to prepare beforehand. Try pita bread for something different. Commercial mayonnaise is ok for sandwiches, but avoid homemade mayonnaise. The raw egg yolks and the lower acid level in the homemade version can promote spoilage and food poisoning.

If planning to grill, be sure to pack uncooked meats in a separate cooler. One last suggestion: take along a comfortable pair of shoes if a hike or walk is planned. Add a camera for photo ops, too.
