Health Benefits of Mangos
Researchers presenting at the Federation of American Societies for Experimental Biology (FASEB) have found that mangos have properties that can help regulate blood sugar levels among people suffering from obesity. The study, led by Edralin Lucas PhD of Oklahoma State University, suggests that it is certain nutritional compounds within the fruit that have the ability to improve blood sugar levels, even when body weight remains unchanged.

Consumption of mango may also help prevent certain types of cancer, particularly of the colon, breast and prostate. Mango contains triterpene and lupeol which has been found to be an effective inhibitor of tumors. Mangos also contain another compound, kaempferol, which may help fight cancer growth.

Texas A& M researchers have found that the same polyphenols that may help prevent cancer could also help reduce inflammation within the body. In addition, quercetin in the mango may help fight inflammation and hypertension and Mangiferin may help promote metabolism.

Mango Nutrition
The average-sized mango has about 60 calories per serving (one cup of chopped mango is just 100 calories). Mangos are rich in over 20 different vitamins and minerals. It is rich in vitamin A, vitamin C, folate, B6 and copper. The fruit is also naturally high in prebiotic dietary fiber, which can help encourage the growth of beneficial gut bacteria.

How to Choose, Store and Cut a Mango

Selecting Mangos
Don't focus on color. It is not the best indicator of ripeness.
Squeeze the mango gently. A ripe mango will give slightly.
Use your experience with produce such as peaches or avocados, which also become softer as they ripen.
Ripe mangos will sometimes have a fruity aroma at their stem ends.
The red color that appears on some varieties is not an indicator of ripeness. Always judge by feel.

Ripening and Storing Mangos
Keep unripe mangos at room temperature. Mangos shouldnt be refrigerated before they are ripe.
Mangos will continue to ripen at room temperature, becoming sweeter and softer over several days.
To speed up ripening, place mangos in a paper bag at room temperature.
Once ripe, mangos should be moved to the refrigerator, which will slow down the ripening process. Whole, ripe mangos may be stored for up to five days in the refrigerator.
Mangos may be peeled, cubed and placed in an airtight container in the refrigerator for several days or in the freezer for up to six months.

Handling and Cutting Mangos
Always use a clean knife and cutting board to cut a mango.
