Derek Johnson believes that "empowering people is one benefit of what we try to instill in our guests because they can do more than they think they can coming in and they are capable of continuing their journey back home as well." To help them, he teaches resort guests to "create an eating pattern for your body just like you have learned to do here at the resort! Ideally, you eat three meals and one snack (maybe two) per day. This includes never skipping meals, especially breakfast." Derek admits that breakfast skipping is one of the biggest challenges. Ingredients:

  • 1/4 cup Truvia baking blend
  • 1/4 cup cocoa powder, unsweetened
  • 1 and 1/2 tablespoon arrowroot
  • 1 and 1/2 cups nonfat milk
  • 1 egg
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon chocolate extract

Directions: Cream the sugar with the egg and cocoa powder and arrowroot with milk. Add the extracts and bring to a boil. Temper the egg mixture and combine. Stir until thickened. Pour into ramekins and chill. Optional: Garnish with slice of strawberry and mint.
