One of the challenges of Passover: what to eat for breakfast? For a healthy, diet-friendly option, consider whole wheat Matzo topped with cottage cheese and apple. Here's the breakfast that I enjoyed this morning: I heated a whole wheat Matzo in the microwave. On top: half a cup of cottage cheese sprinkled with cinnamon and a packet of Splenda.
