I had the opportunity to see the documentary "Forks Over Knives" which was presented by the Colorado Springs Vegetarian Society Meetup Group at the East Library in Colorado Springs on Sunday. Parking was at a premium for that movie! There were about 100+ people there to learn more about how to eat to get and stay healthy. The movie focuses on how eating a healthy plant-based diet can actually reverse some health problems. including Type 2 diabetes and heart disease.


Most people don't eat enough fruit and vegatables, and in fact, the amount of meat one person consumes at each meal would feed an entire family in Asia. Eating a plant-based diet can help you be less tired with more energy. One gentleman was consuming 1 1/2 cokes and two energy drinks daily to get through the day. After being on a more plant-based diet for three months, he had lost 20 lbs and felt more energetic and wasn't drinking the energy drinks anymore. Heart disease dropped dramatically in that country between 1941 and 1945. In the 1950s, TV dinners and other "convenience foods" were introduced, and in the 1960s, heart disease was on the rise. Is this coincidence or a product of what we eat?


"Forks Over Knives"--choosing to eat a healthy diet (forks) instead of having surgery (knives) to become healthy and take care of their health.
