Mashed Cauliflower

Avoid the carbs in mashed potatoes with mashed cauliflower! The texture is similar, and so is the taste. The recipe also is high in vitamin C and because it's rich in indoles, it helps your body metabolize hormones.

1 pound cauliflower, chopped
1 tablespoon butter
1 teaspoon salt
teaspoon ground black pepper

In a medium saucepan, combine 1 quart of water and cauliflower. Bring to a boil and cook for 15 to 20 minutes until cauliflower is tender. turn off heat and drain cauliflower.

Add cauliflower back into warm saucepan and let sit for 1 to 2 minutes. Place into a mixing bowl, add the remaining ingredients, and beat with electric mixer until fluffy.
Makes 8 (-cup) servings, each containing approximately: 40 calories, 3 g. carbohydrate; 3 g. fat; 8 mg. cholesterol; 1 g. protein; 217 mg. sodium; 1 g. fiber
