One of the major complaints people have when trying to lose weight is that low calorie meals are bland. In an America where our taste buds are constantly barraged with huge doses of fat, salt, and high fructose corn syrup, this isn't surprising. We've forgotten what real food tastes like. But while losing weight does require some retraining of your taste buds, you don't have to give up big flavors just to lose weight. The secret is learning to unlock the potential of fresh herbs.

Fresh herbs are starting to slowly make their way onto supermarket shelves, but the best places to get them are still at a local farmer's market like the Nashville Farmer's Market, or to grow them yourself. Most herbs do very well in planters so they're perfect for apartment dwellers or those with small yards and many are stout enough to survive even the brownest thumb.

Here are some ideas to use fresh herbs to make your dull "diet" meals shine:

Surprise your salad

Toss just a few fresh mint leaves into a salad and give it a toss. Every 2-3 bites, you'll get a fresh minty surprise that mixes extremely well with lower calorie dressings like Italian. The occasional change-up in flavor will trick your taste buds into not getting bored with salad.

Make restaurant quality salsa, from a jar

Ever notice that, no matter how expensive you go, you can never buy a jarred salsa that tastes as good as it does in a high end Mexican restaurant. That's not because they make their own salsa. Most buy theirs in a jar just like you do. The secret is that many Mexican restaurants keep fresh cilantro on hand to chop into the salsa. The bright flavor of the cilantro does wonders when paired with tomatoes and vinegar. Best of all, cilantro is one of the most common herbs stocked in grocery stores and is definitely one of the cheapest, usually costing less than $1.00 per bunch.

Make some thyme for a baked potato

Baked potatoes are a great low calorie dish, but they aren't terribly tasty until you add butter, salt, sour cream, and cheese. Suddenly your healthy baked potato becomes a fat and calorie laden mess. Next time, try just a tablespoon of lowfat sour cream, add just a pinch of salt, and sprinkle a liberal amount of fresh thyme on your baked potato. You won't even miss all of those other ingredients.

Make that baked chicken taste great
