When you think of summer foods, burgers, ice cream and apple pie come to mind. Not the highest paragons of health but OK in small amounts.

So how do you introduce more foods like quinoa, kale, goji berries, hemp seeds and exotic ingredients like camu and maqui powder into your diet? Check out these three new and recent cookbooks.

Kale: The Complete Guide to the Worlds Most Powerful Superfood (Sterling, $14.95): Just out last week is this softcover book by Stephanie Pedersen, a holistic health counselor and health writer. The book contains loads of ideas for incorporating the superstar leafy green into your diet.

There are more than 75 recipes for drinks, breakfast dishes, entrees, appetizers and, yes, desserts that contain kale in some form.

And lest you think this is some hold your nose and eat book of recipes, how about trying Kale-Bacon Quiche Cups, Pinto Bean Mole Chili, Caramelized Shallot-Kale-Prosciutto Sandwiches, Green Polenta, and Kaled-Up Chocolate Brownies.

In addition to the recipes theres information on the different varieties of kale, tips for growing your own kale and a laundry list of the beneficial nutrients found in kale.

Superfood Smoothies: 100 Delicious, Energizing & Nutrient-Dense Recipes (Sterling, $16.95): Julie Morris, a natural foods chef and author, has come up with 100 smoothie recipes that are loaded with superfoods, such as goji, leafy greens, fresh fruit, chia, nuts and seeds, and vegetable-based protein powder.

Be prepared to hit the natural foods stores for ingredients that you wont find in your regular grocery store foods such as camu powder, maca powder, white mulberries, sea buckthorn juice, maqui berry powder, lucuma powder, acai powder (there are lots of powders).

All these exotic ingredients are blended with produce and dairy-free milks or coconut water to produce vegan smoothies jammed with nutrients. Some of the more interesting smoothies include Mango Ginger, Caramelized Banana, Lucuma Lime, Strawberry Chamomile, Toasted Coconut & Macadamia, and Sesame Hemp.

And there are some pretty un-smoothie-like ingredients in some of the drinks. Cauliflower? Roasted beets? Broccoli? Brussels sprouts? Yep, theres a smoothie for that.
