No one makes classic Italian cuisine like Mama. Unless, of course, it's celebrity chef Rocco DiSpirito. On a new mission to turn traditionally fattening foods into healthy concoctions, Rocco recently appeared on "The Biggest Loser" to teach contestants to whip up their own tasty, healthy food. Now he's authored a cookbook dedicated to healthy food, entitled "Now Eat This! Italian: Favorite Dishes from the Real Mamas of Italy -- All Under 350 Calories." Featured in the book are 100 tasty recipes for low-calorie versions of classic Italian dishes. From pasta to cannoli and more, eating right never tasted so good! Ingredients
- 4 ripe peaches
- 2 tablespoons slivered almonds, toasted
- 1/2 cup skim milk
- 2 tablespoons raw agave nectar
- 1/2 teaspoon almond extract
- 1 tablespoon soy lecithin
- Prosecco
Directions: Cut the peaches in half using a sharp knife and remove the pits. Cut them into large bite-size chunks. Spoon peaches into large serving bowl and sprinkle with the toasted almonds. Combine milk, agave nectar and almond extract in a medium bowl and blend with a hand blender until incorporated, about 30 seconds. Add the lecithin and blend for about 20 seconds, until it becomes frothy.
