After rising to fame when he competed on "Top Chef," kitchen king Sam Talbot concocted his own career as a mastermind of delicious, healthy food. For Sam, creating healthy meals and snacks is more than a challenge: It's how he manages his type 1 diabetes.

Author of "The Sweet Life: Diabetes without Boundaries," Sam was diagnosed at age 11. He calls that diagnosis "a life changer" that brought his mother to tears - and motivated him to take responsibility for staying healthy. The diagnosis has made Sam "a more conscious chef," he said in an interview. He's more aware of his environment, customers, his health and how he teaches others in his role as a chef. "Challenges come and go in my line of work," reflects Sam. "I meet a new one every day." That challenge: keeping his blood sugar under control and his heart healthy. But that doesn't mean deprivation. Here's one of Sam's favorite sugar-free cookie recipes.

Ingredients

  • 1 cup creamy peanut butter
  • Granulated stevia extract equivalent to cup of sugar
  • 2 eggs
  • cup quick oats
  • 2 teaspoon pure vanilla extract
  • Cinnamon for garnish

Directions: Preheat the oven to 350 degrees. Grease a large baking sheet. In a mixing bowl, combine the peanut butter, sweetener, eggs, oats, and vanilla and stir with a rubber spatula to make a stiff dough. Roll the dough into balls the size of large cherries and arrange on the baking sheet, 2 inches apart. With a fork, flatten the cookies, turning the tines 90 degrees to create a crisscross pattern and dipping the tines in a bit of additional sweetener each time to prevent sticking.

Bake for 12 minutes, then remove from the oven and sprinkle the cookies with a bit of cinnamon.
